Capellini Caprese

Makes:
4 servings, 1-1/2 cups each

What You Need!

1/2 lb. capellini or spaghetti, uncooked
1/2 cup KRAFT Tuscan House Italian Dressing and Marinade
1 onion, finely chopped
2 cloves garlic, minced
3 cups halved grape or cherry tomatoes
1 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese
1/3 cup fresh basil, finely sliced

Make It!

COOK pasta as directed on package.

MEANWHILE, heat dressing in large nonstick skillet on medium-high heat. Add onions and garlic; cook and stir 2 min. Add tomatoes; cook 5 min. or until heated through, stirring occasionally.

DRAIN pasta. Add to tomato mixture; mix lightly. Sprinkle with cheese and basil.

Substitute
Substitute 3 tomatoes, chopped, for the grape or cherry tomatoes.

This is SO good! I have made it a few times when we have had friends/family over for a pizza night and everyone has loved it.

Chicken Parmesan


Ingredients:
4 boneless chicken breasts, pounded to 1/2 inch thickness
1 egg
1/2 cup milk
Seasoned bread crumbs
2 to 3 tablespoons olive oil
8 slices mozzarella cheese, or more
1 jar (16 oz) spaghetti sauce
Parmesan cheese

Preparation:Whisk together the egg and milk. Dip the chicken breasts in milk and egg mixture and then in bread crumbs. Heat olive oil in a large skillet over medium-high heat. Brown the chicken in the hot oil on both sides until golden, about 3 to 4 minutes on each side. Set chicken in a baking dish.
Slice 8 pieces of mozzarella cheese and put two on each chicken breast. Pour 1 jar of your favorite spaghetti sauce over all. Sprinkle with Parmesan cheese and a little more mozzarella and bake at 350° for about 25 to 30 minutes, or until bubbly. Serve with spaghetti, garlic bread and a nice green salad.


I had to post this because it is my husband's favorite recipe. He asks for it for every special occasion (his birthday, Father's Day, etc...)

Quick & Easy Chocolate Bundt Cake


1 Devil's Food Cake Mix

1 box (4oz) instant choc. pudding

4 eggs

3/4 cup veg. oil

3/4 cup water

2 cups sour cream

1 cup choc. chips


Beat eggs. Add rest of ingredients. Mix well. Pour into greased and floured bundt pan. ( Make sure that you have a big one, mine was small and the cake batter spilled all over my oven). Bake at 350 for 50 minutes. Invert onto cake plate. When cool, sprinkler with powered sugar and ENJOY!!!


I use this recipe when I don't have a lot of time to make a dessert. It looks pretty, is quick and so good!

Cilantro-Lime Chicken with Avocado Salsa



Fast: A three-minute dip into a pungent marinade is all that's needed to deliver big flavor to chicken breasts. Serve with saffron rice.

Yield
4 servings (serving size: 1 chicken breast half and about 1/4 cup salsa)

Ingredients
Chicken:
2 tablespoons minced fresh cilantro
2 1/2 tablespoons fresh lime juice
1 1/2 tablespoons olive oil
4 (6-ounce) skinless, boneless chicken breast halves
1/4 teaspoon salt
Cooking spray

Salsa:
1 cup chopped plum tomato (about 2)
2 tablespoons finely chopped onion
2 teaspoons fresh lime juice
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
1 avocado, peeled and finely chopped

Preparation
1. To prepare chicken, combine first 4 ingredients in a large bowl; toss and let stand 3 minutes. Remove chicken from marinade; discard marinade. Sprinkle chicken evenly with 1/4 teaspoon salt. Heat a grill pan over medium-high heat. Coat pan with cooking spray. Add chicken to pan; cook 6 minutes on each side or until done.
2. To prepare salsa, combine tomato and next 4 ingredients (through pepper) in a medium bowl. Add avocado; stir gently to combine. Serve salsa over chicken.

I added some cilantro to the salsa as well. We love it and it made this dinner even more yummy! It has now been added to our rotation.

Buckeyes....


Peanut Butter Balls, a.k.a Buckeyes

Ingredients:
  • 1 1/2 c. creamy peanut butter
  • 3/4 c. salted butter softened
  • 1 1/2 tsp. Vanilla Extract
  • 1 (14 oz.) can sweetened condensed milk
  • 1 (2 lb.) bag of powdered sugar
  • 6 oz. chocolate bars (I used good 'ol Hershey bars)
  • 6 oz chocolate chips
  • 1-2 Tbsp shortening

Directions:
1. In a large mixing bowl with an electric mixer combined peanut butter, butter and vanilla.
2. Gradually beat in condensed milk and powdered sugar, alternating the ingredients. Beat until thoroughly mixed.
3. Shape into 1 inch balls and place on a waxed paper lined baking sheet. Refrigerate for 2 hours.
4. In double boiler (or microwave), melt chocolate bars, chocolate chips, and 1-2 Tbsp shortening.
5. Dip balls in chocolate mixture, set on cookie sheet lined with wax paper and chill in fridge.


I found this on Recording Moments blog... its on my blog list on my family page. Anyway, I made these and they were very good, reminded me of a Reese's Cup. I made my balls larger than 1 inch because it was time consuming but once I tried them I realized you need them smaller... there was just too much in a larger ball. :)

Lemon Chicken With Pasta


Ingredients

  • 1 pound dried penne
  • 2 chicken cutlets, cut into fingers
  • Salt and freshly ground black pepper
  • 3 cloves garlic, sliced
  • 1/4 teaspoon red pepper flakes
  • 3 tablespoons olive oil
  • 3 tablespoons roughly chopped fresh parsley, for garnish
  • 2 lemons, juiced
  • 1/2 cup grated Parmesan

Directions

Cook the pasta in a large pot of boiling salted water, until al dente. Drain well.

Season chicken with salt and pepper. Heat a large grill pan over medium high and add chicken. Grill until golden and completely cooked. Remove to a plate and slice.

Add the garlic and red pepper flakes to a saute pan with 3 tablespoons of olive oil and saute until fragrant. Add the cooked pasta and turn heat off. Mix all together.

Remove pasta to a large bowl. Add chicken to the warm pasta and season with salt and pepper. Sprinkle in chopped parsley. Add the juice of 2 lemons and mix. Before serving top with Parmesan.

Mock Sushi



CRAFT MATERIALS:

1/4 cup butter
4 cups mini marshmallows
6 cups crisped rice cereal
20 to 25 gummy worms
1 to 2 boxes of fruit leather
12- by 17-inch baking sheet
2-quart saucepan

Time needed: Under 1 Hour
1. Grease a 12- by 17-inch baking pan.

2. Melt butter in a 2-quart saucepan over medium heat.

3. Add the marshmallows and stir until smooth.

4. Remove mixture from heat and stir in the rice cereal until it's evenly coated.

5. Turn the baking sheet so that the shorter ends are at the top and bottom. Then press the marshmallow mixture on the sheet, distributing it evenly.

6. Starting at one side and 1 inch up from the lower edge, place gummy worms atop the mixture end to end in a horizontal line.

7. Gently roll the lower edge of the marshmallow mixture over the gummy worms.

8. Then stop and cut the log away from the rest of the mixture. Use the same method for 4 more logs.

9. Slice each log in 1-inch-thick "sushi" rolls and wrap them individually with a strip of fruit leather.
